This has bothered me with USB installers in the past, so there are a couple tricks I use to sync it up.

I'm not sure if they will work with Linux partitions the same way, but anyway So maybe that would work better on an ext4 volume. There's also a --device option for bless, but again, I've never tried it with Linux. Yeah this is what I found too. I'm not aware of a way to rename the Linux partition in Apple's boot manager.

That's not to say there isn't one -- maybe someone else knows how and can post a reply. However, if you wanted you could use refind as an alternative boot manager, which should allow you to set up the entities you can boot and their names however you want. It takes some work but if you're familiar with working in Linux then it shouldn't be too big of a deal.

The one big downside I frequently encounter is that every time you update macOS it will reset back to booting macOS by default rather than refind. Yeah, I wanted to use the default boot manager but that's what I was afraid of. I guess it comes with using a proprietary OS, things are more locked down. It's not that big of a deal anyway, it would just be a nice thing to be able to change.

Be careful, lazy software developers use the default Machintosh HD - changing the Drive name can cause unstable apps, i've seen weird stuff happen with the indexing. This has always been available on Mac OS. Have you tried booting in Recovery Mode and using Disk Utility there?
